Tucked behind mountains, Pope Valley enjoys sunnier, drier conditions than Napa’s plush, fog-swept western reaches – out here, days pass like the Old West. Beaming sunshine coaxes out rich black fruit, while a fresh herbal streak keeps this Cab vivacious. Just-picked blackberries charge out front, followed by cooling herbs, a brush of cedar, and one gloriously steeped black cherry plucked straight from the bottom of an Old Fashioned.

And it comes from Pope Valley Winery, established in 1897 and led by the Eakle family since Napa’s “it girl” 1990s. The family produces fewer than 5,000 cases a year, focusing on small-lot wines, and still operates from the property’s original three-story gravity-flow winery, complete with a hand-dug cave.
